An amazingly delicious combination flavors of sweet honey candy corn and peanut butter all in a cookie bar treat.
It is raining candy corn! How I wish it was really raining or even felt like rain but IT IS candy corn season and I snatched up 2 bags before they were to disappear from the shelves. Do you like candy corn? I do, but I am particular about my brand of candy corn and only like the sweet honey flavor of the original Brach’s. (And no I was not paid or given anything free to endorse Brach’s, they are just my favorite and I can trust them to taste exactly what I think candy corn should taste like) I am also weird and only like orange and white candy corn, I stay away from the pumpkins or the other colors of candy corn.
Now I could just slowly or quickly gobble up all that candy corn but I decided to use them in baking some treats this year. My first creation – candy corn peanut butter bars. I won’t lie and tell you these are healthy because they are not. I won’t even tell you they are low calorie because they are not, they are super rich – just warning you. But I will tell you they are delicious – candy corn and peanut butter are a wonderful combination together and especially in these candy corn peanut butter bars.
Candy Corn Peanut Butter Bars
An amazingly delicious combination flavors of sweet honey candy corn and peanut butter all in a cookie bar treat.
- 1/2 cup unsalted butter ((softened))
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1/2 cup peanut butter
- 1 tsp vanilla
- 2 eggs
- 2 1/2 cups all purpose flour
- 1 tsp salt
- 1/4 tsp baking soda
- 1 1/2 cup candy corn ((divided))
- Preheat oven to 375 degrees
- Line a 9×13 pan with foil and spray with cooking spray
- In a large bowl, cream together your butter and sugars
- Add the 2 eggs and vanilla, continue to cream together
- Add your peanut butter, mix in well
- Alternating adding your flour in 3 parts – 1 cup of flour, salt, mix in – 1 cup of flour, baking soda, mix in – 1/2 cup of flour, mix in
- With a wooden spoon add 1 cup of candy corn, mix in well
- Using the wooden spoon, spread the batter (it is really thick) in your pan – even it out
- Press the remaining 1/2 cup of candy corn into the top of the batter
- Bake for 13 to 15 minutes, until toothpick comes out clean
- Remove from oven and let cool before cutting into bars
